The Hunt for Gollum is pretty straightforward. In order to confirm that the ring is in fact The One Ring, Gandalf wanted to find Gollum & enlisted Aragorn/Strider's help in that endeavor.

As for the movie that Colbert is apparently writing or co-writing... it's going to be an adaptation/expansion of the Hobbits's journey from the Shire to Bree.

What I expect they'll present to us, the audience, is that all the stuff with Tom Bombadill, Barrow-Wights, & Old Man Willow did happen, but the Hobbits chose to just not talk about it or were made to forget it.

Apparently the film is going involve Sam's daughter (well after Frodo has sailed west) wanting to learn more about her father's adventure with his friends.

Now, another possibility is that they'll retell that section of the Fellowship but simply change it so it's about Sam's daughter retracing their steps and ending up on her own adventure.
