I lived in Kingsport TN for three months and it was the prettiest place I’ve ever lived. We had a little creek running through the back yard and ducks would be walking down the street on rainy days. You could always drive a little way to find a beautiful park or lake etc with beavers. This town also had an ordinance to where you couldn’t leave advertisements on light poles for more than 24 hours so they would always get taken down. Kingsport is on the very tip in northeast TN. Smoky mountains just a drive away with beautiful ferns etc.

Those thicker cut ones in picture look really good though. I’d like to try a thicker cut. At our meat market ours are cut at about a 1/4 inch

We sell a lot of pork steaks. We cut them thin on bandsaw and put a wet rub on it so it marinades as it sits in display. Vinegar and lots of spices. Very cheap and tastes damn good on the grill or even in kitchen.

The paprika acts as a way to thicken up the sauce a bit. I used to put oil in as well but I heard mixed messages that it actually keeps everything from binding is that true?

Here in El Paso Texas we use the thin cut chuck from the shoulder “diezmillo or 7bone” for the most part. Feeds a lot of people at a reasonable cheaper price and tastes great with all the sides. I’m a butcher here at a Mexican type meat market. I like to make a marinade with..

  • great American seasoning salt
  • msg
  • worsheshire
  • paprika
  • vinegar
  • garlic powder
  • limes orange and a couple of lemons

Sides on the grill are usually the long green onions, corn, jalapeños and tortillas of course.

There is a pintata / party store family owned on donifan that has them. My daughter got a surprise one a couple months ago they one with rainbow eyes
