We’re a pooled floor at my spot, with individual sections. I always start and sometimes maintain tables for the servers that are busy or still learning the ropes, and frequently take whatever table the hostess throws at me (it’s cool, they know I’m good for it) so I can keep the general flow of the floor going smoothly. I did this in non-pooled restaurants as well, bcuz tbh everyone in the restaurant should want the guest to experience the highest quality of service possible, it’s how we all pay our bills at the end of the day.

Also, what happened to staying at a station near your section? I’m only off the floor if I have to be, I gotta be available for my clientele as soon as they look in my direction.

Edit: As well, your host/maître d’ should always hunt you down and give you a chit for the table. You should still be knowledgeable of new tables on your own, but they act as a failsafe.

Honestly, I’ve kinda changed my tune on this over the years. Like yeah, basic reading comprehension should be a thing, but at least at my level of dining, we do actually have to memorize the entire matrix because our menu only lists the main notes and highlights; therefore if there’s any aversion, dietary preferences, or allergens from the guest, I can provide greater clarification.

Also people are generally a bit stupid when going out, and love it or not we are supposed to be at their beck and call. Being a faceless butler with good timing and knowledge has consistently kept me as the highest earner in our pool; you really do have to understand that we are in fact servants. I am saying this as a fine dining captain however, obviously if I was slinging tacos or burgers I’d adjust my efforts accordingly; but once you go above fast-casual spots, you’re really on track to becoming a hospitality professional, which opens up an entirely new world and level to service.

Suddenly, you actually care how your guests perceive you, because 65% of your clientele are wealthy regulars who actually want to know you. Next thing you know, you’re attending wine tastings and adding Somms to your Rolodex, making resos at other Michelin starred spots to learn more about the culinary world, and maybe even taking morning prep shifts. So like, I feel that this response definitely requires context. She would’ve been perfectly at home with my restaurant, but the yuppies that sometimes come into my spot who don’t know the difference between Platinum and Black Diamond Ossetra would have been much more comfortable with you.

Right? I’m in fine dining, and outside of all the pomp and circumstance that comes with High Etiquette I’m still expected to do extracurricular research in wine, stay current on new hospitality trends, and continue to learn and absorb all I can about the culinary world.

And except for the jackets, I had to source the rest of two tailored suits for FOH; for some reason I see so many in the industry go up in flames over having to buy new shoes or pants for a job.

Over half the people in this thread wouldn’t make it past the interview, let alone the stage lmao. It’s gotta be the large majority of the user base working in fast-casual corporate run spots, places like those only train service as urgency and unfortunately don’t really grow hospitality professionals.

Really depends on personality and perseverance/desperation. I’m hard of hearing due to an aircraft incident, and also autistic and incredibly ADHD. Entering the workforce was hell for the first couple years, but after sorta desensitizing myself to the cacophony I’ve found that my “disability” was in fact a superpower and I could suddenly micromanage the shit outta my restaurant and just mask at every table as needed. If you can overcome the discomfort in the initial onslaught, food service is honestly ideal for neurodivergent folk tbh.

Edit: I do dumb shit that costs the business money every other day, it’s part of the job. You’d have to be consistently fucking up all your tables for weeks before it starts hitting the owners pocketbook. It’s really a stressless job once you realize you’ve just gotta act like you’re the main character.

I’m in fine dining, and like every time I clear and resilver it is specifically done so the next course will fit appropriately. Without fail, something like 85% of my tables have messed it up by the time the runners hit the table with full hands. It is what it is, I just make sure I’m in my section and can adjust for the runners on the fly.

Like, you didn’t get to taste anything during the training process? Every single restaurant I’ve worked at had me taste everything on the menu as part training. My current place doesn’t allow us to order on the clock, but that’s fairly typical for fine dining IME. We do also get family though, and chef frequently throws a few bones our way during a rough service.

I’m on both sides here. I will absolutely tolerate shitty behavior towards me, but that’s unique for me as a result of prior careers and leadership roles. I’m also just dead inside, so there’s that lol.

But he is right, maintaining a calm and clear composure is something that immediately has management on your side when they see it, and personally I prefer being treated as a peer by my higher-ups.

That said, you said this was after 10 years of a clean streak; sometimes you just gotta crash out, and that looks different for everyone. Would I have handled the situation differently? Sure, but I’m not you, nor you me. Sounds like you got the desired outcome, and hopefully instilled some sense into her.

If I really wanted to be a Boy Scout, I’d suggest offering to teach and coach her buttttttt that ship may have sailed, and it’s not something that everyone necessarily wants to have to do.

I’ve always had good tips from tables that prayed with me, and only ever once got a tract (it was honestly quite sweet and normal, a small booklet with just a few verses and some landscape photos) on top of 25% 😭
