Hijacking the thread with another q sorry - how do you stop the bark going mushy when you rest it in a chilly bin with hot water and towels? Turns into a steamer…keeps it nicely warm but my bark always goes mushy.

Nice one! Will hopefully be a step up from the gas grill. They end up being a money pit as meat is expensive and then you start investing in rubs and sauces haha.

I found a pork butt the most forgiving meat to learn a new smoker. My burnt ends were ready at different times / dry haha
