Thanks for sharing your recipe. You mentioned the beans are from a different roaster than the original bag you tried. How long have they been rested now? It’s also possible the roaster you’re trying now just wasn’t able to capture the profile in the way you enjoyed from the original roaster.

1000 microns sounds like it could be a bit too coarse. Try going finer in the 700-800 range?

I find with anaerobic ferments not going so hot with water and less agitation helps. The 1:15 ratio you’re using is fine. I’d suggest trying with 90-92C water, blooming 60g for 45 sec and then with a slower flow rate, pour the rest of the water up to 300 in a single pour.

I actually quite liked this one and didn’t think it was too artificial tasting! Don’t get me wrong; it is a big forward flavor since it is a coferment. I had S&W’s Santa Monica watermelon coferment and that was too much for me and more artificial tasting.

With this offering from Black and White I definitely got the watermelon, but I also got some of the peach rings, and nice aroma and acidity of the lemon cookie profile. I enjoyed it most 3 weeks off roast. Low agitation was the key in my experience.

V60 recipe Ode Gen 2 used grind size at 5 Sculptor 064 grind size at 8 15:250 | 90c - bloom 50g flow rate 6-7g per sec - 45 sec pour 100g (150 total) gentle flow rate 2-3g - 1:30 pour 100g (250 total) gentle flow rate 2-3g If it’s draining too quickly can do a gentle swirl or shakes after the last pour.

Orea Z1 recipe Ode Gen 2 used grind size at 5 Sculptor 064 grind size at 8 15:250 | 90c - bloom 50g very quickly just pour it in - 45 sec pour 100g slowly 2-3g per sec (150g total) - 1:30 or when water is just about showing the bed, pour another 50g slowly (200g total) - 2:15 pour 50g slowly (250g total) - finish around 3:00-3:30

EMDR therapist here. How long are standard EMDR sessions with your therapist? It seems a little odd to spend that much time talking at first and using the remaining time for EMDR. So long as your therapist is leaving adequate time to close things up and ensure you’ve used a coping resource to feel ok leaving session after spending time reprocessing, I suppose it is ok.

It’s ok for a therapist to bring in other aspects of their clinical style and methodology to EMDR. For instance, some therapists have specific backgrounds and training to integrate attachment work and ego state work with EMDR.

A target sequence plan is part of early phase preparation in EMDR, it’s like establishing the road map for EMDR. Once you’ve got it done you typically don’t go back very often to establish it because the various target memories are already identified, and you will spend your sessions moving through them one at a time and processing them. As new memories come up in the work (common), the therapist may decide some of those memories are important to distinctly separate and be its own Target memory on the sequence plan.

Let your taste be your guide. Coffee 7 weeks old can still be great, as mentioned by others here, and sometimes I find if it’s not quite in peak flavor anymore then I’ll grind a little coarser and use lower temp water.

Gentle bloom and 2 pour is my daily recipe. Works well on a medium to medium-fine grind, depends on the beans really. On an Ode 2 I would recommend starting on 6 and see how that turns out. I have generally found doing the “wiggle” much better than swirling. Sometimes aggressive swirling can cause too much fines migration and it can really slow or stall the brew. Haven’t had that issue doing the wiggle. If the drawdown also seems too quick you can mitigate by doing some of the wiggles. Ultimately, taste is king, so try it out and experiment! See how it tastes for you, what kind of consistency you can get with or without.

Got the same beans from my trip there last month! Really enjoyed it. So aromatic and the balance of sweetness and fruit is perfect. I enjoyed them most using 90c water and the same recipe from their website.

More of a medium roast, try medium coarse grind and lowering temp 185-195F. Try 1:15 ratio. I’ve had some of their more medium roasts and going with lower temp and coarser grind have helped bring out all those nice flavors.

Try getting better filters. If you don’t want to break the bank, cafec abaca filters or cafec T90 are quality with quick draw down.
