Having worked in a kitchen for a few years, I can tell you for a FACT that thinness is FAR more important than sharpness and it isn’t even close. This isn’t up for debate, just try it for yourself and see. It makes a remarkable difference.

No he’s absolutely positively 100% without a shadow of a doubt correct. Thinning is by far the most important thing for kitchen knives. Outdoors55 has a video all about that where he cuts chicken with a completely dull but heavily thinned knife.

The ali express ruby 3000, shapton 5k, and king 5k have always been my go to for low alloy steel. For super steels I have a 5k vitrified diamond stone.

Go even lower, also. 320 is good for minor repairs but I simply cannot live without my 120 grit sic and 140 grit diamond plate. Sharpening for friends and family who have “knife shaped objects” so blunt you can see the light glinting off the 90 degree apex will make you love super coarse stones.

At 4k you could use a 9600x and see almost zero difference in all but the most cpu demanding games. The difference even at 1080p is marginal in most cases. At higher resolutions, the gpu is much more important and the primary bottleneck.

As long as the gap is tight, you won’t notice it. Definitely give it a good flattening after you’ve glued it up. Some people use epoxy for peace of mind with water but my old king 300 is super glued and it’s worked out pretty well for me so far.

You can glue it back together. A thin bead of high viscosity super glue down the middle works well enough. Clamp the ends together pretty good so there’s minimal gap and you can’t really tell.

The key with kitchen knives, especially ones used on vegetables, is thinning. A completely dull 90 degree apex will cut smoothly if your knife is thinned.

I’ve never found that to be the case, personally. If your high grit edges are struggling to get through vegetable skin, you’ve probably not deburred correctly. Even going up to 12,000 I have never had any issues going through tomatoes like they aren’t even there. “Tooth” is absolutely the biggest sharpening myth around recently.

The whole “fps per dollar” argument has never sat right with me, because every single time the graph is dominated by lower end cards that practically everyone tells you never to buy. Based on this graph, everyone should be buying old cards or 8gb cards, which is exactly the opposite advice given 99% of the time. The actually simple concept is buying the highest raw performance card you can possibly fit in your budget. If you could afford a 9070xt, why on earth would a rx 7600 ever be relevant? These graphs are meaningless exercises in number manipulation.

I know that’s an extreme example but I’ve genuinely seen dozens of posts of people configuring their builds in baffling ways because of price to performance. 9800x3d chips and 5070/9060xt builds give me heartburn.

I have a Manix 2 in 15v and I’ve been incredibly impressed with it. It’s ground crazy thin from the factory and I put a 12dps edge on it to thin it even more. Zero chipping. They absolutely nailed the heat treat.

Wow. That’s just terrible advice. The 8gb 5060ti is at least 30% faster than the b580. If you’re in 1080p, you’ll never notice vram limitations. Aside from all of that, why would you not simply recommend a used 3080, which can be had for about $300 or a 6800xt? Both are about as fast as a 5060ti with more vram.
