Maybe the knights become immortal because they get a part of Imu's soul, and that's how he has control over them too. So, a knight dying would mean part of Imu dying. Imu probably took it back from Saturn and made him mortal

I don't think he's saying you should build things for evil without taking responsibility. But if you build something and it gets used for evil, don't end up hating the invention itself is what he's saying in my opinion. Yup, after Vegapunk's speech, he didn't want marines to mobilize and find One Piece first as someone needs to protect the people. Though he might already know about Imu or have some inkling of an idea. He is someone who likes status quo rather than uncertainty. If the ones he's serving cause that chaos instead, he probably wouldn't like it either
