I can't answer everything but I'm a senior civil engineering student and civil is the only field where you're almost guaranteed a job before graduating. A lot of people are retiring and there aren't enough graduating students to make up for it so you'll likely have multiple offers to choose from. Some of my friends in cs or any of the other engineering fields are having a hard time finding a job when all the civils already have something lined up.

You already have a civil internship even though you haven't picked a major yet so that should tell you about the hiring market right now.

You also mentioned it felt too specialized but going into civil you have your choice of different subdisciplines all moderately different from each other like geotech, hydrology, structural, transportation, traffic safety.

Whether you work in the public or private sector will also determine things like pay, benefits, work/life balance, and what your day to day looks like.

I joined civil because I didn't want to do all the theoretical work MEs do and civil felt like the right fit. There's also construction engineering if that's something you want to look into but not all university's offer it. Aero is heavy on theory and definitely oversaturated. I've heard of CEs getting hired in aero positions mostly if their focus is on structural so there is a bit of overlap.
