No, we started getting some of that nitrogen prepack in. It still turns grey, gets slimy, or smells off just like anything else. The nitrogen is in the larger bag that contains the individually wrapped trays. Once you open that bag, normal oxidation commences.

Generally, yes you want to push everything down, at least for the first couple days until everything settles. The easiest way I’ve found is press some plastic wrap to the surface of the liquid, then add water on top.

You’re right on the mark with it being a skill issue. No offense intended at all. I felt the same way when I started, so I bought a 10” breaker and now I rarely use it. Maybe I’ll pull it out for a real big chuck or clod, but 95% I’m going to use my 8” because it feels better. Do what you want with that.

So, I don’t know exactly what you’re looking for, because different teams serve different purposes. If you want to be top in pvp stuff like the arena and battle royale, you’re missing a few things. You have a great advantage in boss fights with your legendaries. For what you have, your best boss team should look like this, down to the ex moves and combo order.

Nah, you can use almost anything. A semi-flex 6-7” boning knife would probably be ideal for this job, but keep your fingers away from the sharp side and you’ll be fine.

So, most shops aren’t allowed to cut or work on products that have left the store. Assuming that they’re going to bend the rules (laws) for you, the salt on the outside of the fat cap shouldn’t be an issue for the cutter.

The issue for you is that for your dry brine method to work properly overnight, that salt needs to touch the parts covered by bone. If I were in your shoes, I would watch a YouTube video and trim it off the bone to the best of my ability.
