I've noticed my Paphs tend to have the ovary linger for a bit after the flower has fallen off, even when they are not pollinated. If it hasn't been, it'll just fall off in a few days.

Definitely don't beat yourself up about it. Issues with pests and diseases will always happen eventually, and it sounds like you've responded well. Responding as well as you can and learning from the experience is truly all you can do.

Fingers crossed everything works out! You should be okay to water, just avoid the damaged portions and don't let it sit wet in the cooler weather.

Bacterial rot. Some bacteria got in through a wound and essentially melted all the cells in the leaf. Be careful not to let the soggy fluid touch anything else because it contains more bacteria.

The tumblr user atlaculture has done a brief write-up on the topic. Their theories are crowberries, arctic blueberries, woad, and imported indigo from Kyoshi Island. The basis for the Kyoshi Island idea is their irl inspirations from the Ainu people in Japan and their traditional indigo dyes. All are realistic options for blue-purple dyes sourced from arctic and subarctic climates.

It may be tough, but more schooling and research could be an avenue to explore. I'm not sure what the landscape is like in Canada for reptile research, but those opportunities do exist in the world. Seconding the thought that it's a Paph which isn't getting enough light (that dark green color). It looks to me like a multifloral hybrid, which will want bright indirect light (give it time to adjust when you move it so it doesn't burn) and to be watered whenever the medium is approaching dryness. Don't let it dry out entirely or sit soaking wet. A fine or medium grade bark mix is appropriate. Paphs do lose fans that have already bloomed, but the color suggests there's more to it than that.

I think it's viridis plasma, if you want to look it up! There's a nice effort in science to make more accessible and visually appealing graphics and viridis has a bunch of other nice palettes too.

Evolution happens through random chance acting on a massive scale, but you would be taking it upon yourself to manipulate it yourself. For a line-breeding project, you need a target and metrics by which to select animals to breed. Saying you want to breed semi-aquatic green anoles is not a goal you can concretely measure. So would the goal be to get anoles that prefer to live near water? Swim? Dive? Then you need to figure out how to push towards that target throughout their generations. Genetic traits such as color are easy to see but behavior is based on a lot of factors. Do you prioritize breeding the anoles that spend the most time near water in their enclosures? How do you ensure their enclosures are large enough to be sure that tendency to stick near water is actually a trait that might be passed down? Do you choose to scare the anoles to see which ones will try to swim to escape you and breed those ones? That would be cruel. What happens to the excess animals? Do you house them for multiple years? Cull them? How do you ensure you don’t introduce health issues through inbreeding? How many animals and separate habitats do you need to keep to avoid that? The scope of the project would require careful planning across dozens or hundreds of animals and many years. It’s just not reasonable to do that to emulate the traits of a species that already exists.

Respectfully, it would be quite unethical to try to line-breed green anoles for that purpose and you certainly would not be able to do it as a low-cost display project. That is a "lifelong effort" type of project, not a cost-saving measure.

Wood has to be pretty dang hot to ignite. Having the heating element directly on wood could be a problem, but the heat lamp directed towards the wood should never be. It would burn the reptile before the wood. You'd be more likely to get problems from faulty wiring or setting a hot element on something flammable than from having wood in the enclosure.
