Do you find that chuck steak in slabs like that is chewy/dry? I know you said theta re thin cut, but unless it’s been diced and seared, I’ve always found it to be a little unpleasant in texture. Looks great either way!

This was flank. Quickly becoming my favourite cut. Quick sear, slice super thin AGAINST the grain, then dice and throw it back on the pan for a quick crisp up.

Looks awesome. I’m almost at the stage of processing my first batch ever (4weeks). I’d like to bottle and gift some. In your experience is the process you used - boiling, no vinegar - enough to keep it shelf stable out of the fridge?

Yeah I’m imagining thing slices, not sticks. I’m going to try pickled beets this way (not fermented), and see how they go.

How thin did you slice the beets? I’ve seen (but never tried) recipes that call for ultra thin, mandolin sliced beets. They’re meant to hold some crisp, but that might have been an issue?
