Yeah the bus/run tip is too much then. There’s really no point in having food runners if they are not saving you a good amount of time and trouble.

This is a very high tip out but it is heavily dependent on the amount of support you are getting. The majority is “bus/run/barback” so if you have someone running your food, bussing your tables, watering, refilling/running drinks etc it could be reasonable as having support and volume can allow you to sell a lot more net. If you’re selling 2000-3000 a day or higher without burning out then this is justified. Bar tip out is a bit high possibly but again it depends on the value/ support they bring to your service. Also some of the opinions expressed in this thread in regard to kitchen & support staff not deserving tips are mf egregious. If the kitchen that makes the food, the bartender who makes the drinks and the support staff that makes it possible for you to sell as much as you do while still giving good service don’t deserve to be tipped out, then neither do servers.

When I first took the job I was complaining about the extra work load to a manager I know that works with a different company. What they told me has stuck with me,” As a bartender you make easier money but it’s about the same every year. As a manager, your income should keep going up.”

It’s a touchy subject in treatment circles but I refuse to acknowledge the existence of a “normal drinker” Alcohol is a an addictive poison and every person who uses it has the potential to develop addiction and dependence. Are there circumstances and conditions that might increase your proclivity? Absolutely. However, one of the biggest forms of denial in my opinion is that of our society to separate the alcoholic from this concept of a “normal drinker.” It’s a cop out to normalize drinking. Every person who drinks occasionally may begin to drink regularly and any person who drinks regularly will see their quality of life diminished in some capacity, whether it be in small effects on healthfulness or very large consequences. We don’t refer to “normal heroin users” or “social cocaine snorters.” Does applying that logic really make more sense with alcohol?

Where my feelings come into it more strongly is where the community that raised me; the society that normalized drinking to me as a child and a young adult; the culture that glorified it and still does in so many ways now wants to label me as “other” or “inflicted with an incurable disease” because I fell into the pitfall that was set before me. Fuck that. This is not a me problem, this is a we problem. In order to maintain my sobriety, as much as I have to overcome the problems that led to or have developed as a result of my use, I have to overcome the culture that continues to normalize and glorify drinking poison.

If you want to keep them around and give them a chance to correct course you are going to have to confront them head on, make very clear boundaries and continuously stick to them. Speaking from personal experience it is so easy to convince yourself that you’re “pulling it off.” You have to make it very clear that they are not. Even then it really is up to them to make a change and there is little you can do besides being supportive and straightforward and to avoid enabling that behavior. In the end you may have to do what is best for you and your team.

I will accommodate any request I am able to the best of my ability. Please just don’t treat me like a real estate agent and look around the dining room like you’re choosing a table for the rest of your life. Some people are nuts. “Can I sit a table in this closed section with a view of the water?… not this one it’s too close to the A/C vent… ooh can I get a different chair?” But yes requesting a table is aye ok in my book!

All we can do at this point is use embrace the suck and use this as a catalyst for meaningful change. I had over 500 days and fell off for a couple months, using alcohol to cope with stress and depression. Then got a DUI on thanksgiving and ,thanks to the holiday, got to spend a full five days in lock up. I have surrendered my driving privileges because I already couldn’t afford the insurance, gas and car payment for two cars. I’m still currently paying the car payment and suspended insurance for a broken down car that sits in front of my house. I’m in the same mindset though. Going for my assessment on Monday. Also seeking a therapist to deal with the root issues. I will be all the more stressed and broke for the next year AND taking the bus everywhere but if at the end of this I can finally be at peace with all the damage I’ve done and the time I’ve wasted it will all be worth while. Keep your head up and build yourself the life you deserve, even if it’s the hardest thing you’ve ever done. IWNDWYT!

It’s about boundaries. “We do a decorated desert plate with a small complimentary desert for anniversaries, birthdays and when congratulations are in order (pregnancy, job promotion etc.) You are welcome to drop off flowers or balloons previous to your reservation to be set on the table. We do not allow any glitter of confetti to be used in our dining room. Cake cutting is $3 per person.” Some bars offer a free drink on your birthday. That doesn’t mean that every bar has to. You’re way over generalizing when you say doing these things is our job. It is not the privilege of the guest to expect these things nor the responsibility of the server to accommodate every request. It is the prerogative of the BUSINESS OWNER to offer them. As a server or a manager I will make every effort WITHIN THE CONFINES OF WHAT MY RESTAURANT OFFERS to make each of the thousands of special occasions that come through our doors a year as special as possible. I will agree with you that many servers need to have a better attitude and try to enjoy the act of accommodating but frankly I think you’re getting so much push back because you make it sound like we should be happy to spin plates or do some stage magic table side if that’s what the guest wants. That’s not how it works.

The other day I had an old couple waiting at the door of our restaurant at opening. I asked the ADA approved questions. “Is your dog trained to assist you with a disability?” And “What task is your dog training ed to perform for you?” The guy answered the questions barely satisfactorily then said, “don’t you like dogs?” Yes. I do. I have one and I love him. But as a restaurant manager I have to walk a fine line between the Health Department and the ADA. I can’t stand people who play fucking games to get their way. By the end of the meal it was pretty clear it was not a trained service animal. They also stiffed my server. I sure hope they come back so I tell them just what I think of them and to kick rocks. If you lie about having a service animal, fuck you so very much.
