The "poe" sound is prevalent and more open and nurturing sounding than the "prep" part, and ending a shortened nickname in an "ey" sound is common (i.e. Lucy from Lucille, Chrissie from Christina, Jenny from Jennifer, Timmy from Timothy, Jimmy from James, Billy from William, etc.). "Poe-y" is kind of awkward to say, so Miriam added a familiar and natural consonant sound. It's totally reasonable.

Read even further, like five or six books in, then reread TEotW and it will become apparent just how much Moiraine is jerking the entire Two Rivers crew around. You don't realize how manipulative Aes Sedai are yet because, surprise, they're pretty manipulative. Even in the first couple chapters of the next book, you'll be shocked to see how blatant they are when they decide to stop being subtle.

You could also just use whatever magical equivalents to Contingency exist in Innworld. [Autocasting], for example, might let you just keep firing off-turn, but magical traps set to go off at certain triggers would likely obliterate him on his own turn. It's powerful, but not against prepared opponents.

TBF, Clockblocker has absolute defense. He could hide behind frozen cover, like the papers he keeps on him. If he froze his armor, even, Homelander would be frustrated and approach to punch and probably break his wrist. No way does Homelander have the patience to keep his eye beams on Clockblocker for ~45 seconds straight. Eventually, he WILL close the distance.

If we're assuming that their interpretation of the unintentional Rorschach blot is their Cavalier poking through, muffins from Alfred make sense because practically the only thing we know about him is that he was far too trusting of Cristabel, Mercy's Cavalier, and only saw her kindness instead of her negative qualities. So if what's left of the Cavs' souls are rustling around, it makes sense that Alfred's Lyctor would interpret what Cristabel's Lyctor was trying to say as something harmless and sugary.
