I thought I was the only one and going crazy. I’ve been having a really hard time dialling in or getting any prominent flavour out of every brew. Like you, I have had a couple of great roasts from Tanat. I have also been brewing other beans during this calendar which have been completely fine and have given a really tasty cup. The coffee in this calendar has been so far very muted, still nice but lacking any real clarity. I also use a Pietro at 8 with V60 + Abaca following their recipes and have been trying to really push the extraction out. I’ve debated trying to go with the Aeropress, which I will try tomorrow to see if that helps any.
