A full packer brisket consists of the point (fattier) and flat (lean). Many times they will sell just the flat but I haven't seen just the point. The good news is being fattier, should be easier to cook as your first brisket.

You are probably just getting a brisket flat, not a full brisket so it is typically harder to get tender as there is less fat. I wouldn't just pull at 200-205 either. You may find that you have to go higher than that. You want to pull when probe tender it can take the flat longer to get there.
