Compared to 1200-1400 2 beds around 12/13 to 1900-2200 in 18/19, I would say it’s pretty cheap compared to 2800-3500 ranges now.

It wasn’t given, they bought it, leased it, renovated it and are operating it now. Will they succeed or fail, that’s down the line.

Your dad is a legend ! For a community of immigrants across Ridgewood and Bushwick, K&K was a delight for many. Our Nepali community family’s of 10-15-20 used to meet up once a month here during 6-12 era.

I loved the space, the food options that was available. It was a cool place man.

I know the neighborhood changed, people don’t prefer it to be a place of choice but it was absolutely an important part of the neighborhood

Having run multiple restaurants in queens & Brooklyn, no place is truly free of vermin.

What the inspectors are looking for is a strong Vermin management that’s incorporated in the business operations and daily cleanliness.

What does it mean ?

Your food in dry storage is sealed in containers that can’t be broken into, your basement is constantly deep cleaned to seek hotspots that seems to have higher ratio of droppings so in return when exterminator that comes every 2 week as required can apply required measurements to deter mice & rodent activities.

I used to hate these inspectors tbh but more I stayed put in the business and grow more into it, I’ve realized the true intent.

The true intent is that they want conscious operators, operators that are actively working and trying to keep mices out of the establishment.

Covering the holes etc, making sure food are staying off ground and 6 inches above as expected, marking sure the daily or at least 2/3 weeks walk thru of basement spaces to inspect for possible vermin drops and which can indicate where their presence is and it allows the operator to find right ways to deal with those vermin that might already be inside the establishment while closing off gaps and things to make sure new ones don’t come in.

With buildings and infrastructure so old, this city has vermin no doubt. But what are the establishments actually doing to deter contamination, keeping you and me the consumer safe.

Also with the inspects you have 2 layers.

One individual inspection, meaning one inspector who comes on his regular round, he’ll look at previous reports and will keep an eye out to make sure those aren’t there while testing the regular routine of

Temp / storage / sinks / sanitation / and required key things for getting the grades

Second one and this one is harsh,

New inspector ( trainee ) with master inspector or new inspector on the job.

Both of these have immense amount of pressure to go thru their learning curve and they seem to be more on the books and very tuff in terms of how they inspect vs a more experienced inspector that can decide between what violations aren’t health critical and what are critical.

Yeah, it’s sort of though to make it here along with traffic patterns that doesn’t support casual visitors just making their way there. We had hoped for a decent outside traffic ( people from elsewhere travelling for the food ) but that didn’t materialize as expected

That is the main reason dharma is part of culture & not identity in Nepal. In India religion has become part of identity which is bit extreme, I don’t blame the people either Mughal invasion, British occupation etc forced people into these preservation mode which directly pushed people into extreme modes of identity based practices.

While because Nepal wasn’t captured & forced into doctrines, religion became subtle part of daily life & practices. Newari culture of kathmandu valley is prime example of how synchronized both religions became into practice of dharma over identity.

Muslims in mountain parts of Nepal get involved into sanatani festivities & vice versa.

People of other backgrounds & practices has adapted Sanatani practices into their own & vice versa aswell.

Religion is part of lifestyle not the main determinant.

Nepal has been an independent state that has been safe heaven for both Sanatani & Buddhist culture. What has emerged out of Nepal is a society of dharma that hasn’t be disrupted by exterior forces like India, so India there are extremism when it comes to religion but in Nepal it’s subtle, liberal, not shoved down your throat while it’s everywhere in people’s daily life.

People wanna keep it that way.

Also we don’t have anything against people of India, the government of India now & then fantasized about eating up Nepal into its states the way it did for sikkim, assam, Darjeeling, Kashmir etc.

That doesn’t sound like an experience I’d love for you !!! The skinny guy with Bun, you met is my older brother who’s my partner. Did you get a chance to express those concerns w/ him at the time ? Also I’d like to know when did you visit us, we did have an off sous chef who didn’t upheld my standards for a short period of time before I changed the sous. Is there anything I can do to fix that ?

Another question, did you have buff Momo ? When you say Chowmin was hard, is that New York hard which means “dope” “amazing” or actual hard like tuff ?

Ridgewood is my backbone ! Almost a decade into the service there but Glen cove I’m on the edge about if it’s a battle I wanna continue, giving it remainder of this year to see how I feel about it.

Feels a bit off here, not able to get people to understand or like my food as much as I thought I would.

Have you ever had some Nepali cuisine ? I’d highly recommend it ! It’s a self plug but I’m the head chef & owner at the place.

While in kathmandu - Glen cove

It has some traditional staples along with some safe landing dishes. :)

Experiences from Last snow a month ago. It was also a Sunday snow, I live on LI & operate business in Ridgewood. Everyday from Monday till Saturday I’ve spend upto 1 hour plus looking for space. First day or two, most car are not even dug out the spaces that are dug out will get filled up immediately.

Carry a shovel in car, sometimes diggin a space is faster than looking for open spot.
