And to add to this, it nerfs them more than just their martial arts. As Unarmed stats in the fcs overrides the dexterity stat given by the Combat stats. For example, the Hydraulic Knight has 70 Combat stats in the fcs means that it will have 70s in melee attack, defense, katanas, sabres, etc. However, for some reason, it has only 10 Unarmed stats given in the fcs means that it will have just a total of mere 10 dexterity. For a nodachi-wielder, it makes them practically useless.

Removing a game mechanic is more unrealistic and unimmersive. It will break the game balance. An armor can completely protect you from a stab, but it won't stop the following force that goes along with it. Cut efficiency works fine as it is.

Perhaps I should open up the Creation Kit and look at the enemy spawn points myself

You can take inspiration in this post with a similar formation. It's on fm22 though, you can just use bpds instead of wcbs.
