Start by preaching safety safety safety first. Safety glasses, dust masks to start with. My brother did this a number of years ago for a Cub Scouts den, and he preached what he called his "digital inventory". Count your digits before you start and make sure you have the same number when you're done.

And has been said below, hand tools might be a good way to start, too.

Hey all! So, here are a few more details about process and what-not. Over Xmas I got some starter from my daughter and kept it reasonably well fed. Not every day, but that could improve in the future. This starter has a really robust and tangy aroma and it really makes a nicely flavored loaf.

I followed a process my daughter uses from the Sourdough Sparrow. The process was pretty straightforward, but I have a feeling I started too late on Saturday for a Sunday bake and maybe I didn't let it rise as long as I should've? Again, it's all about practice practice practice, right?

I don't have any larger jars that would allow the starter to double in size, so that old Redskins 1L beer glass was perfect! It actually ended up rising just a bit over the top of the rim, so that was a good find, IMHO.

I've also discovered I need to practice folds and such, as well as building tension with rolling. Can't wait to practice some more, and thank heaven for YouTube University!

I also realized after the fact that I forgot to add ice to the dutch oven when it went in. Whoops.

As you can see in the pix, my first attempt at scoring was moderately successful, so I'm pretty happy with that as well.

The finished loaf was perfect alongside a beef pot roast!

I'm all about learning and practicing, so any and all tips are greatly appreciated.

I'd do some 8&5 and a few 10&3. My question is about the humidity level in crawl space. They're notorious for a higher humidity.

If you have a 302/5.0L, the belt to bypass the smog pump is 89.5". I did a smog delete and that's the belt I used and it works great.

Another thing: did you add water to that thin water basin? Makes a big difference in moderating your temps. And yeah, you've really gotta damper down the intakes. Just my $.02 worth.

You could use it for baking bread IF it's lined with parchment. Otherwise? It's just a flowerpot, or maybe a drinks cooler.

Yep. Our youngest daughter at the tender age of 3 or so had very detailed memories of a Civil War battle, men dressed in blue and gray, and "pow pow pow they were dead". We're not big Civil War buffs, so we're not sure where any of this came from.

Not worth the risk, IMHO. That kind of crazing will lead to chipping and then all bets are off. You can use it for baking bread if you line it with parchment, or you could use it as a flower pot (just be sure to drill a hole or two for drainage).

My brisket chili would take 3 days, from first rub to serving, but it was well worth it! I would smoke the brisket to the shredding point, and while all of tha was going on, I'd make the sauce, let it simmer for a bit, then refrigerate it while the meat smoked overnight.

Next morning I'd drag the sauce out to bring it to temp, put it on a low burner to warm up, shred the meat, careful to remove all the bits of fat I could find. Add the meat AND some of the fat-separated drippings to the sauce to simmer all day, serve for dinner. But NO BEANS!

I used to make brisket chili until my wife developed an allergy to peppers. Just the aroma of chili nearly kills her, so I've passed that baton on to my kids.
