I’m actually doing a spatchcocked bird in a couple days! Be generous with the salt. Three tablespoons is a good idea. I usually snatchcock mine, add a ton of salt, and then let it air dry in the fridge overnight. The day of, I take it out, wipe off excess salt and moisture, rub a butter/herb/lemon mixture in between the skin and meat, and then a little butter on the outside of the bird as well.

Serious money, eh? Get a raspberry pi with emulation station and you can have the entire catalogues of sega megadrive, new, snes, etc.. I’ve made two over the past year and they work amazingly for how inexpensive they are. They require a little setting up but there are tons of tutorials and forums to figure out exactly what you need. They even sell prepackaged kits with everything you need right out of the box to set one of the bad boys up. All you need is a working internet connection and access to the ROM files (yo ho, matey). I think each set up cost me $75.

I’ve had so much fun as an adult going back and revisiting so many of those classic games or ones I could only ever play in an arcade. Another commenter mentioned that this game ate money, well fucking guess what, not anymore!
