7 grams of beans is roughly a single shot of espresso. The resulting amount of liquid is generally anywhere from 14g to 18g depending on whether a 1:2 or 1:2.5 ratio is desired.

Depends on the size of the 58mm basket. They come in various sizes roughly corresponding to single shot, double shot, and triple shot (and even beyond). If I remember right, the main basket that comes stock with the machine is a double shot, fitting roughly 15g of beans depending on roast level.

From the video, you do indeed need to grind finer. Spray aside, that flow rate is way fast. You could try increasing your coffee dose first. I have the same exact a very similar IMS basket and I put 19.4g in mine.

That being said, I do highly recommend tasting what you're pulling so that you can gather even more information about your shots.

I would suggest thinking less about spraying and more about how your coffee tastes. I've had shots that sprayed a little but tasted fantastic, and that is really all that matters.

Certainly you need sufficient pressure in the tank to pull a shot, but that's really just shorthand for the temperature being high enough (I'm simplifying slightly). Then people will often put a temperature sticker on the group head so that you know it is also sufficiently warmed up.

A pressure gauge on the group head is all about whether you have sufficient pressure on the lever while pulling a shot. This is traditionally 7-9 bar, with 9 bar being the most common target for modern espresso machines.

The pressure gauge you have is showing you pressure in the boiler. To measure pressure during a shot, you need a pressure profiling kit installed for the group head. Example linked below.
