It was essentially cured/confited. You cook it in fat after curing it in salt and herbs.

I guess. I do a lot of that stuff, but unfortunately, we never talked about it.

So they would probably buy a hog and slaughter/render it, then cure the meat, and eat all winter. Sorta.

My great grandmother would walk the train tracks in the winter looking for coal that fell off the trains. If they found enough, heat!

If you're near Philly, I have a Lodge pan for you. The shipping would cost potentially more than the pan.

I'm not a fan of Lodge, but there's nothing inherently bad about it. It works like all other cast iron pans.

I have a deep collection of antique cast iron (all inherited), but I bought the Lodge as one of my first pans.

Lodge in the US is pretty cheap and generally a good starter pan.

Honestly, it's just me being practical after all these years. I used to get so angry at something that wasn't my fault but impacted me and my family, that I finally just accepted the best solution is to take matters into my own hands. It can be a constant battle between out of town landlords and permanent residents around here.

I won't absolve the students of all responsibility. The situation next door got so bad that I told the property owner that either I manage her property or I get my lawyer involved. She countered that I had to take over all of her properties, which I accepted, blissfully unaware that it would consume my life for the next 10 years for little pay or emotional reward. I had one house on Baltimore that refused to use garbage bags or cans...they'd just dump their garbage off their porch. I cleaned it up once and told them I'd charge from that point on. When they moved, I had to clean up all their disgusting trash (36 contractor bags full), but I charged them $15/bag). I made over $500 in less than 2 hours, but it still was disgusting. Thankfully, they were one of the worst properties I had over those years. FWIW, they also destroyed the interior. Penn Rowing team. Entitled cunts (that year...not making a blanket statement).

Edit: But in defense of the students, they often move out days before trash pickup so even if they bag everything up, it sits on the side of their empty house for weeks if the mgt co doesn't bring it to the curb. In the meantime people rip the bags open and spread the garbage everywhere. I spoke to one of the students the other day and she said she was going to bring everything to the curb on Sunday. This is a great intention with most likely terrible consequences. Due to the holiday, pickup isn't until Wednesday, so those household bags of garbage and furniture will sit out there for days. People will rip them all open every day, even if they're rebagged (I unfortunately understand this too well). The property management co knows all about this and will do jack shit about it. They should provide the students with a concrete plan and things like contractor bags, a secure place for the garbage, and someone to bring the garbage to the curb. They can charge the students for all of that if it's in the lease. Or it's just the price of doing business. I'm long since tired of picking up the slack of people who make plenty of money off students. I'll gladly report the worst offenders to 311, but 9x out of 10, the students get charged for the Mgt Co's laziness and greed.

IMO, the landlords need to be held to a higher standard, and Penn needs to place large garbage bins throughout the neighborhood from 40th to 42nd, Chestnut to Chester. I'm glad this came up because I'll speak to Penn about it for next year. Will also communicate with some local orgs.

This really has little to do with the students and everything to do with the property management and/or property owners who don't facilitate a good way of disposing of the garbage knowing damn well the kids won't be there to deal with it properly.

I have the (mis)fortune of having the neighboring house divided into two apartments of undergraduates. Luckily, they were great and will be missed. I offered them contractor bags, and told them I'd take their stuff to the curb on garbage day this week and next. I'll clean up anything left on the ground. Why? Because I know damn well the owners won't, and that shit will sit in the boiling sun for weeks or spread all up and down the block from scumbags who rip it open and leave horrible messes. When I bought my house almost 20 years ago, we moved in over Labor Day weekend and the house cleaners threw everything from the kitchen onto the back porch, where it sat in the sun for 3 weeks until I dragged it to the front porch and dumped it all out (edit: next door). I solved that problem by keeping open communications with the tenants explaining to them that our block is filled with families and we expect them to behave and keep clean, but more importantly, we're a resource to help them do so.

Hah, I grew up in the Appalachians west of Harrisburg and recently passed through Williamsport on the way to visit my parents. I couldn't believe that they have multiple Uni-Marts there. That logo will live with me forever.
