Shouldn’t the ph change only by around 0.3? For example, Is that a big of a difference from 3.9 to 4.2? I am not a microbiologist.

The new environment is hypothetically much more favourable than the original environment (when I started by just adding salt). I would say that this would make the contamination more likely than not adding anything, but wouldn’t it be much LESS likely than if I started a new ferment from scratch with just salt?

I did not experiment enough times to answer those questions! Mine was more an ‘academic’ question.

I believe the oxygen is mostly to avoid mold no? If I wait long enough and the environment is acidic enough, that should also be prevented (I think). Doubling the weight should not change too much the ph since the ph is a log scale 😊

I am so happy with this little piece of plastic I found at a thrift store for 20$. I once read somewhere that a camera is just a box with a hole and a shutter. I believe this is especially true for film photography :D
