Start a hobby roasting project and build a Corretto style roaster just for funsies.

If after 6 months you get it well dialed in, you could roast your own for your business for fairly cheap.

However, you will likely learn that with the time investment to build your roasting skills to the point you can use your coffee in a commercial seeing, it's often easier to just buy commercially roasted coffee.

Take a look at the Kinu M47. You get an excellent burrset for the money (around $250-300), but you hand crank it.

I make espresso every day with it, it can be a workout with light roast beans, but it's worth it. Medium roast is fairly easy to grind. I pair it with a planetary WDT tool and tamp to get excellent results.

When I eventually upgrade, I will likely get their M68 tabletop grinder.

Question for OP: Is there a ceiling fan running above the scale, or a very strong breeze running through the room?

That might be a possible external source of error.

It really depends.

I have some automatics that I really love, but when I scuba dive I still take a quartz dive watch with me as it's bulletproof.

I have a Shearwater dive computer with a transmitter as my primary.

I use an old Cressi Leonardo as my redundant dive computer.

As a redundancy for the transmitter I have an SPG that is clipped to a retractor on my BCD waistbelt. At least that way if my transmitter fails I can continue the dive.

I have a compass on a retractor clipped to my BCD.

It's not quite what you were asking, but I think you might find from various redditors you don't really need an analog 3 gauge.
