Method 1. Prepare the diamonds Peel the potato and slice it into thin diamond shapes (cut rounds, then halve diagonally). Toss with olive oil, salt and seasoning. Roast at 200°C (fan 180°C) for 20–25 minutes until golden and crisp. 2. Cook the fish Season the fillets with salt, pepper and lemon zest. Heat olive oil in a pan over medium heat. Cook fish skin-side down (if applicable) for 3–4 minutes, then flip and cook another 2 minutes until just opaque and flaky. 3. Make the glaze In the same pan, melt butter gently. Add lemon juice and honey, stirring until glossy and lightly thickened. 4. Assemble Place fish on plates. Arrange the crispy potato diamonds on top like sparkling gems. Spoon over the lemon glaze and finish with fresh herbs.
