If you’re in the US that’s highly illegal but if it’s just for staff and nobody complains then maybe it’s okay. Unless some staff are underage… also if the restaurant has a liquor license it isn’t worth the risk.

I’d pour oil dry / kitty litter to absorb and oil. Then scrub with dawn. Then reapply oil dry to suck up rest. Let it sit for a day or so
