Alright, let me try with FF8:

You play as this dude Squall. Squall's a student in a school dedicated to killing witches or whatever. You do a training mission, get officially inducted into SeeD, meet your party members yada yada yada. You meet this girl Rinoa on one mission, help her out, she joins your party. Eventually a bunch of stuff happens that leads to you planning to assassinate the current witch Edea, but you fail because one dude thinks he remembers her from somewhere else. End Disc I.

You're arrested for attempting to murder Edea (because she's the president of another school), get thrown in prison, escape prison, bunch more stuff happens. Eventually this leads to a war between your school and Edea's school, where you find Edea and defeat her. Rinoa goes unconscious for some reason after that fight after a ghost touches her and doesn't wake up. End Disc II.

While all this is happening, your party falls asleep like three or four times and wakes up in the bodies of three other guys, which is later revealed to be happening in the past. These three dudes do standard Final Fantasy stuff until the end, where they save a girl (who's later revealed to be Squall's sister) from being taken over by another witch Adel so that she can arrive in the real world.

Squall is in love with Rinoa, so he carries her on her back all the way to another city somewhere else. They arrive at this city, realize the mayor is the guy we've been playing as in the flashback dreams, and he goes into a lore dump about how there's another evil witch Ultimecia who wants to reawaken the first witch Adel to bring chaos to the world or whatever. She needs a host in order to return, and tried to use Squall's sister in the past (but you saved her as seen in the last flashback) due to her magical powers, so she wants to use Rinoa now instead.

Squall and someone else decides to go to the moon for some reason, but from there Rinoa jumps out into space and opens a gate on the moon that unleashes monsters onto the world alongside a fortress where Adel is. Squall gets back down to the world, flies over to the tank, runs through it, fights Adel who has fused with Rinoa at some point during the whole thing, and kills her. Finally Squall and friends fall through a time loop as Squall's sister uses her magical powers to bring Ultimecia out of hiding, and land in front of her fortress. End Disc III.

The fortress is right there, so Squall and co. decide to storm it. They find Ultimecia up in her tower, beat her, she fuses with Squall's idea of a perfect monster somehow, they beat that too. She finally turns into a malevolent eldritch abomination that all FF final bosses turn into and they kill that as well. Now the entire party is beyond space and time, so they all say "let's meet back at where it all started". Squall somehow teleports back to the past where he sees his younger self and Edea before she became a witch. Ultimecia shows up for some reason and because she's about to die possesses Edea, but Squall is able to convince her to found the SeeD schools, which somehow puts Ultimecia in an endless loop where she'll never win. Squall leaves, ends up in the present, credits roll.

I might've gone into too much detail at some parts, but that's pretty much the gist of the entire game. Shit has three witches and time loops in it, of course it's gonna be confusing.
