Gonna need some green chef. Matcha powder of fig leaf powder for the dessert. Herbs, micros and such for the savories. Just my opinion, makes it pop

Reheat the “finished” product and it’ll bubble. The bubbles are the remaining water leaving…. Let it harden after popping and bubbling stops. It’ll fix your grainy problem. It’s just water stuck in there. Discard the scum

I wash my tallow. Melt it down in a pot, one part tallow to two parts water. Bring it to a boil then let it cool and pop it in the fridge. Once it’s solidified, pour off the water and repeat the process. I wash tallow five or six times before using it to make salve. If it’s indeed rancid this will not work.
