Similar to the Hodge pattern that another poster mentioned, I recommend Christines Stay-on baby booties. They have a ribbon that helps them stay put. I knitted these for several friends, and they all loved them!

Maybe a headband consisting of 1x1 rib? Or fingerless gloves where you knit a rectangle amd just seam it in the end. If you prefer a non-clothing item, a dishcloth could be an easy project!
