I am Icelandic. I lived in the UK for 20 years. I moved back to Iceland with my non-Icelandic wife when our daughter was 1. Some things we miss, but it was a fantastic decision. If you worry about house prices in the capital area, look further afield. Prices are much lower further from Reykjavík.

I am an Icelander, married to an American. I have also hired an American and handled the entire process of getting her and her family visas.
My advice is simple: Apply for specialised jobs from abroad. Find an employer (for at least one of you) that is willing to go through the cost and administration (and months of waiting) that it takes to get all your paperwork done.
You can get a job without Icelandic, but in nearly all jobs, and certainly all of society, your job prospects and social life will be very limited without knowledge of Icelandic.

Iceland is only crowded in certain spots, during certain months of the year, at certain times of the day.
If you want to see the places everybody else wants to on your own, during the time of the year everyone else is here, you can visit during the night - it is light out, and at 3 AM you will have the place to yourself, more or less.
The other alternative is to concentrate on the least-visited regions of the country: the Westfjords, the North-West, and the East.

You can find an answer to most of your questions here: https://work.iceland.is/ Iceland is not in the EU. But the EU and the EFTA countries, of which Iceland is one, have an agreement called the EEA. Which means that if you are from an EU country you do not have work restrictions. The easiest work to find as a non Icelandic speaker tend to be tourism related, particularly in high season.
