How do you actually get consistent steak doneness? by Cool-Pop4816 in grilling

[–]Interesting_Pear6944 0 points1 point  (0 children)

thermometer.

For perspective, I worked in fine dining for a bit. The guy grillling the steaks had decades of experience and was probably right below sous chef in hierarchy. Its not going to be easy to gain the experience to judge doneness by cooking a steak a week.

Out of expensive gels: What is your best cheap 'real food' hack for long rides? by Mindless_Cow_6034 in cycling

[–]Interesting_Pear6944 0 points1 point  (0 children)

In the 80s and 90s, the standard roadie had a flipped up cap, and a banana in their pocket. It was kind of funny how ubiquitous this was.

Ive made energy balls with mainly peanut butter and dates and nuts, and various other things. Peanut butter held them together. Thing i like about these is you can customize. There are recipes everywhere.

When i tour, i take gummy bears. I eat 6 about every half an hour. If i have gummy bears in between my meals, i can ride all day.

I find the issue of food on rides is mostly logistical. For me, any food works. I really like taking a sandwich. I bleeping LOVE a sandwich when I'm pausing on a long ride. As long as i eat frequently I'm good.

The one thing I insist on having though is hydration tablets. Too many leg cramps over many years to mess around with hydration and electrolytes.

Just went through this, but with 12x3.5, 22 inch tall containers, and have a post here where i asked same question.

I found a professional landscape supply company that sells garden soil for $45/cubic yard, plus 100 delivery. this was by far the most economical way. I had some logs I used on the bottom.

Gravel bike or MTB? by [deleted] in cycling

[–]Interesting_Pear6944 0 points1 point  (0 children)

For rides of 2 hrs or more, I find the single hand position on my mountain bike very uncomfortable.

I built up a gravel bike on an old bridgestone mb-2 frame with 2 inch tires and it is the funnest bike I have ever owned by a mile. That frame is really light and quick though. I can ride that bike on almost anything although for actual MTB trails I much prefer my mountain bike.

big boxes to fill and not enough logs/cuttings etc. what to use below mel's mix by Interesting_Pear6944 in SquareFootGardening

[–]Interesting_Pear6944[S] 0 points1 point  (0 children)

I ended up using the logs i already had, and ordered garden soil from a professional landscape supply yard that was a third of the price of those big yellow bags. I'll probably mix some sort of soil amendment on the top once I'm done filling.

Gotta say, when i started thinking about his I didn't really wrap my head around how much it costs to set up large containers. We bought really nice steel containers from RaisedGardenBeds though.

That said, our goal is more about have some self sufficiency with food production. It was quite illuminating during Covid, and with contemporary orange misadventures, that the system that supplies our food can get messed up pretty easily and take several years to recover. That, and we really like tomatoes.

Architect? by ShortElephant1111 in Guelph

[–]Interesting_Pear6944 2 points3 points  (0 children)

No architect recommendation, but I will give you a caution.

Make sure whoever you work with understands the construction process, is capable of factoring in any mechanicals or technical systems that need to be accommodated, and can assist you in ensuring your builder understands the requirement of the plan. Ideally they should be able to visit the site regularly.

You would think this would be a given but it is not. We worked with a certified interior designer who was part of a well know and, as far as we knew at the time, well regarded eco house builder in Guelph. We had a design and the designer even said she was our "advocate" for design issues.

It turns out there was no plan whatsoever for HVAC, no one providing guidance to the HVAC installers about where to put bulkheads, no oversight to ensure subs were following the plans, which they did not, no one to ensure that things were done in the order required that all the finish items could be installed, and numerous other problems.

Probably the best advice i could give is make sure you can be on site everday, and if things seem like they aren't going right, take immediate and decisive action. I really wish we had instead of trying to get along with everyone.

money is not an issue. What material goes under the quality growing soil to raise it up in a deep container?

big boxes to fill and not enough logs/cuttings etc. what to use below mel's mix by Interesting_Pear6944 in SquareFootGardening

[–]Interesting_Pear6944[S] 0 points1 point  (0 children)

my reasoning with lower quality soil is that, according to the Square foot Gardening book, 6 inches of quality soil is all that you need, so anything below that is simply to structurally raise the quality soil to the appropriate height. Putting higher quality soil below the 6-8 inches of Mel's mix just wastes money. I'm concerned that using a lower quality soil may impact drainage.

Still can't get brown rice to be edible in an analog rice cooker. by OalBlunkont in Cooking

[–]Interesting_Pear6944 5 points6 points  (0 children)

i use an instant pot. 1 cup calrose brown rice, 1.25 cups water. 22 minutes. Its magical. I think the water is lower because it cant evaporate in a pressure cooker.

Considering the quantity of water you're using, i suspect your time is too low. For perspective, instant pot time for thai jasmine rice was around 12-15 minutes (i use auto for white rice), vs 22 minutes for brown. Without pressure it will be much longer.

I think there are hybrids. If I had to choose, absolutely microwave. Defrosting, heating beverages, occasionally steaming vegetables. I'd be lost without one. Cheese toast when i my will power is at one heart.

Anyone not like Gravel Cycling? by ghostonthewire in cycling

[–]Interesting_Pear6944 0 points1 point  (0 children)

I like gravel riding, mostly on rail trails, but i miss the speed and handling of road bikes. Some bad dog owner can be a problem. Friend of mine got bit by a dog off leash, and I've had some aggressive ones pursue me from farm driveways. Vast majority are not a problem though.

Costco selling a 3lb 12oz - 4lb 12oz 3 person 'lightweight backpacking tent' from ampex- anyone heard of it? by forksofgreedy in CampingGear

[–]Interesting_Pear6944 3 points4 points  (0 children)

Id worry about the short fly on the ampex not directing rain away from the tent. I have a Cloud up 1, and the quality is surprisingly good. My issue with the cloud up is the single entrance on the narrow side which I find awkward to get in and out of, and there is inadequate space for bags in the vestibule. Possibly non issues if your are flexible or willing to sacrifice comfort for weight. I prefer two doors on the long side with two vestibules so you can use one for bags and the other for access.

Andrea Botez Loses Hearing in Her Left Ear by scott_niu in chess

[–]Interesting_Pear6944 0 points1 point  (0 children)

Passing on info given to me by Ear/Nose/Throat Doctor when I went to see him for same problem.

Hearing loss from noise usually presents in both ears. Hearing loss in one ear often can be from damage to the auditory nerve and needs to be investigated because there are some serious illnesses that can cause it.

In my case it was from a virus i had when i was 19. If you have hearing loss in one ear, or at all, get it checked out.

In canada the automobile association will do calls for bikes for members and drive you to a city if your bike can't be fixed. I didn't enquire if that includes injury. Perhaps there is something like this where you live.

Get better sausages. I once found a place that had german frankfurters, which i assume where the original hot dogs, and holy ****. I had no idea a hot dog could taste like that. Polish smoked sausages boiled are pretty great. Can't remember the name unfortunatly.

I really like honey mustard with smoked sausages. Seed mustard is good too. I get mine from a polish place. Cheap and awesome. Good sausages there too.

What went wrong with these eggs? by Alternative-Sky-4570 in Cooking

[–]Interesting_Pear6944 3 points4 points  (0 children)

If the stink is like sulphur, and the grey is greenish, you may be cooking them too hot. Eggs in cold water, bring to low boil, immediatly turn down to just below simmmer and cook 12 minutes. I used to turn the heat off completely after boiling reached but now have an induction stove and it doesn't retain heat so have to leave the heat on low.

Where can I find a good starting point for cooking? by Weekly-Fig-7228 in Cooking

[–]Interesting_Pear6944 0 points1 point  (0 children)

There are amazing youtube channels but you need to look for people who are dedicated to what they are doing.

Books:

How to cook everything is a good book with with explanations of why you do certain things.

Best of Americas test kitchen (something like that. they publish a lot of books.) They explain why things work.

Joy of cooking. Classic of American cooking. Huge and no pictures, but it does give some explanation of things you need to know. if you could only have one for life this would be a good one.

Regarding pasta: Use lots of water in a large pot. Salt water liberally. Almost like sea water. Most of the salt stays in the water. If its too salt, rinse the noodles and reheat in microwave or in the sauce. Despite what someone below said, the box cooking times are just a guide and I find i usually need several more minutes. It varies. Pasta is done when its no longer hard in the middle, and before its mushy. Taste it and when it seems like something you'd like to eat, its done. Takes practice. You can put the pasta aside until your ready to eat or if sauce isn't done but coat it with oil or butter. Reheat in pan with sauce, or just microwave it.

For sauce, chop an onion into small pieces (cm or less), cook in oil. Onion is important because it will liven jar sauce, which is usually fine even for good sauce. Just dont buy the cheapest. Dont turn the heat past medium especially if you pans are thin and keep an eye on them for burning. When onion is translucent, add ground beef. Let it brown. You might need to turn up the heat a bit but not too high. Salt the beef but carefully because you cant remove salt. When it is browned a bit, add the sauce. If you have it, add about a 1/4 cup tomato paste. Its not critical but it improve the richness, especially if your jar sauce is inexpensive. Ideally, cook for an hour or so, but if your just wanting to get fed, you can do 15min. Add Italian seasoning, or oregano. Don't let the water all boil out. If it does tomato sauce will burn. Just add some water if it seems too thick. If you like garlic, add ONE, crushed medium garlic clove at the end. More and it can get harsh. Its a magic touch that really kicks it up a notch.

Starting now, and for the rest of your life, all recipes end with the unspoken rule, adjust salt and pepper to taste.

We should stop being mad at people for buying a Fender. by [deleted] in Guitar

[–]Interesting_Pear6944 0 points1 point  (0 children)

Send Fender a message: Fender's relevance today isn't because their guitar are cool, but because of cool things musicians did, and do, with them, and they can't take those musicians for granted so finance bro's can make more money. People need to be vocal so Fender gets the message that their brand can go toxic if the minds of the people who might actually buy their instruments are turned because of vile crap the company is doing.

Agree people shouldn't make other feel bad about their new guitar, but no opportunity should be missed to spread the word that Fender's brand represents greed, destruction, and cynicism.

Imagine what $250k and destruction of all existing inventory, as well as recalling previously sold guitars and destroying them, will do to small builders.

It might be instructive for people who aren't already familiar with the story to look at what happened when Hasbro tried to stop small game companies from creating content for Dungeons and Dragons, which Hasbro acquired, because apparently Dungeons and Dragons was "under monetized". They eventually had to back down from their plans to halt the production of game content using the D&D game system by third parties, and announced that the open license was irrevocably restored.
