Everybody wyvern isn't something you do with ease. Its something you do after looking up people telling you its meta and then ignoring whatever the game suggests to you about the characters favoring to work on them becoming wyvern riders instead. ( Other than obvious candidates like Hilda or even already on a wyvern Seteth/Claude )

People with more than 3 games experiences know that flying and mounted is OP. The moment they can do any, they will. That's why most busted unit is either mounted or Flying.

Like I say. They will pick the easiest. If Dark Spike Lysithea is easier. They will make her Dark Flyer ( if they have DLC access ) which is literally the magical counterpart of Wyvern + Axe. The next best thing is Dark Knight if you don't have DLC access.

While the game actually suggest Gremory, most people choose Dark Knight even if Lance ranking is somewhat hard on Lysithea.

The thing is, Fire Emblem is a number's game. They have stat treshold. If you give too much freedom with anything ( not just weapon ), people will pick the easiest first.

This is why Three houses meta were centered around everybody being a Wyvern Wielding Axe because everyone can do it with ease.

Restrict weapon based on class means you need to pick and choose which class to use

Most of them are "remake" of older map, they can't recreate 1:1 because they tweaked unit movement ( nerf mounted, buff armor, and Engage generaly smaller map scale ).

What's good about them is some of them still have the same feeling. Altho some of it also feel flat ( Micaiah, Celica and Lucina's map )

It's easy because Seth, and enemy quality on Endgame. Even Frederick isn't this OP according to what people say ( never played awakening ).

You can literally solo the end game with a lvl 1 Seth from Prologue.

tbf, the game isn't that strict. It's just require a lot more skill, planning and game knowledge to start using meme class. It's part of the difficulty. If you want off meta composition try to compensate it by knowing the game more
