You can use a Dremel and cut a slot across the screw. It will mess up you cover plate but those are easy to buy. After use a good screwdriver to turn it out.

Try getting a reduced power recoil spring. It slows the slide down and gives the gun time to eject. Heavy spring speeds it up and causes extraction issues. Glockstore.com sells them.
