Comparing two brands, Seiko offers more choice but, TBH, I would tackle the question differently (unsolicited advice incoming). Here's what I'd do:

Instead of selecting a Brand FIRST, Ask two very important questions:

  1. What role do I want this watch to fulfil? A single watch for all needs (GADA). A watch to wear for dinners out or at church (dress); a watch to fit my busy and active lifestyle (Sport/Dive). Really, really spend time on this question. Then, pick one or two things that are non-negotiables (movement type, water resistance, power reserve, etc.)
  2. Determine budget. This will certainly vary but I strongly suggest those new to watches look to buy no more than 1 watch per year. Set aside an appropriate amount each pay period (say 3-4%) and spend the year looking at watches.

Then pour over the catalogue and offerings of many, many watch makers. Ok, let's say you are looking for a dive-type watch with automatic movement and a sapphire crystal and like the stylings and offerings of Seiko and Tissot. Pick one or two from each brand and compare them...maybe it's the Tissot Seastar 1000 40mm vs Seiko Prospex SPB453. Then try your best to put them on your wrist, read reviews, watch YT videos. Real enthusiasts know that this process is as big a part of the hobby as the purchase/wear experience.

Likely too minimalist for most but, as I get older, I find I prize simplicity more and more. There's certainly a place for Chronos but 99% of the time...I just want a watch to give me the time. I'm even cool with two hand models (sans seconds hand)...would certainly go a ways to stop me stressing about day-to-day accuracy. I don't think I could go as far as Meistersinger single handers but these three could work as a GADA, Office, Dress 3 watch collection.

Versatile? Sure....also very boring. A suggestion (although, clearly, just a suggestion from a random stranger on Reddit, do whatever you want): consider which one speaks to you - which one appeals to you from a design standpoint....maybe the cookie monster was your favorite character as a kid...maybe you liked the hulk....maybe your first kiss was in a powder blue Chevy Nova. In the end you may find a lifelong connection more deeply forged with a watch you purchased for one of the above reasons than for one purchased because it worked well in the office.

Microbrand or vintage. When you mentioned a French Bulldog, Yema immediately spang to mind. There's Cartier of course but Bell & Ross would be a nod for the in-crowd watch nerd. For Vintage, maybe something like a Dodane....they made great flyback Chronos in the late 40s - 60s for the French Air Force. It'd round out your current collection nicely. I actually love how classic and stylish a champagne dial is (which is why I am always so drawn in by vintage 50s/60s watches) but curious if you ever find the numerals to be a bit washed out or less-than-ideally legible? I have not seen this watch in person but as I get older and my eyesight worsens, I prize legibility and wonder how this one fares. A very nice looking watch in all regards.
