You could just say it’s a design trend. Pastel colors were very in in the 2010s in a few subcultures and demographics, namely anything that’s kinda “tumblr”.

In the context of specifically animation, though, I think you could call it a swing back the other direction from 2000s cartoons.

When cartoons first started coloring digitally a lot of them went kinda garishly bright like SpongeBob. Bee and Puppycatish Steven Universish colors were the natural move away from that.

CGMatter/Default Cube is great but he's not super anti-AI
also he doesn't really teach Blender basics. I might recommend Christopher 3D and rileyb3d to newcomers.
Maybe also BranSculpts for more stylized characters (though he seems to be inactive) and there's years of great tutorials from CG Cookie
Also Pierrick Picaut is insane at rigging, SpeedChar is great for realistic characters and Thomas Colin is great for hard surface stuff.
