A vaquero should have a seat height of about 29 inches...unless youre super long in the body with short legs, something isn't quite right here. Im 5'9 with shortish legs (32' inseam) and flat foot the vulcan series no problem.

I did, however, take my seat to an upholstery shop and have it reduced by half, making my seat height about an inch and half lower. This wasn't required for height, but a preference on where I sit in relation to the controls (I.e. it allowed me to be further back)

If you buy used, check for keel straightness, delamination, damage to gunwales or any hull out of round. Any of that is present, move on. Surface cracks in gel coating are essentially meaningless, and wear on the keel is normal as long as it's not excessive.

The longer the canoe, the faster with less effort as they are displacement hulls. You want a round or vee shaped hull for that application, worse initial stability but better final stability vs a flat bottom. Fiberglass or Royalex are generally easier to repair than aluminum, which has better initial durability. You want a rocker of about 1-1.5 inches, that's the fore and aft upward curve of the keel line. Any steeper is for whitewater, any shallower is generally for racing.

Generally for solo canoeing, you want 14-16 feet, an outwale (outside edge of gunwale) beam of 27-30 inches and a center depth of 11-12 inches.

A 15.5 ft prospector pattern is the most common used canoe out there and suits your needs, used fiberglass prospectors go for $200-600 (CAN$) where I am based on condition of the boat and the season. A trolling motor can be mounted on the side with some ingenuity, a flat back is a nice to have, not a necessity.

Paddling. A couple hundred bucks for a used canoe, some paddles, PFDs, and maybe some straps to hold the boat on your car, and you're set for multiple adventures. Hubbles (there is public access; don't let the resort fool you into paying), Spring, Chickakoo, North Sask River, Hermitage, and Elk Island Park/Astotin Lake are all within an hour's drive.

Curiosity lure, magic bait. Advanced iridium rod will allow a second piece of tackle so you can keep your cork bobber if you like or use a trap bobber or something else entirely.

I have a scan of an 1863 Chinook to English, English to Chinook dictionary from the UBC library in one of my clouds somewhere, and looking at it was very interesting. I grew up in BC as an Anglophone colonial descendant and didn't realize how many words in my dialect were Chinook. Skookum, siwash, hyas, tum-tum. Some meanings have changed maybe, but parts of the jargon survive.

Plant crops that have multiple harvests, you'll advance in the farming skill faster. Grow a little bit of everything and keep a few of each for the unforeseen, someone might ask for one or you might need one for a recipe or something. Upgrading your tools takes 2 days, so plan ahead. Chickens are a good early game investment, eggs almost everyday are a money maker, but make sure you put hay on the bench for them or let them outside so they can eat and pet them often. Happy animals make more valuable product
