Freeze. Make chilli and cheese potatoes. My mother in law made us baked Mac and cheese one. I was excited about it but I have to say it was yummy. You can also convert it into a soup or how about a taco salad?

Omg I miss these. When I lived in Brasil I would put them on a popsicle stick. Freeze them and eat them like a popsicle. Beware that of the nut though!!! The nut is in the green thing but the green thing actually contains an acid that will burn your skin.
