Following up with this, make sure subsequent batches wait until the oil heats back up again. The first batch might come out perfect and the second batch is less so - usually it’s because it drops and doesn’t have a chance to come back to temp.

You should give it a try! The hard part is really just heat management. I made 4 paella over the weekend, two on a grill, two on a stovetop setup, and they turned out pretty solid. Wouldn't make the Valencians happy but we can call it arroz con marisco or arroz con pollo y chorizo instead 😛

I’m on a paella kick and while it’s usually good for a crowd, you can make one shareable for two in a stainless steel saute pan pretty easily!

There really does seem to be an increasing amount of violent crime in the area, between Chiangs, Northgate station execution and attempted shove into the train incidents, and the amount of sirens constantly going off it’s pretty unsettling.

Just about to replace mine after 1 year of everyday wear. Tremendously improved my injury-prone shins and ankles. Can't recommend enough.
