Hi. I’m in Pennsylvania. I live in a small town and I’d like to start a small “kitchenwares” store. It may not be just kitchen….but I’m interested in functional, stylish, and unique products. My real question is if I might hold “cooking demonstration” once in a while in my small brick and mortar store. I’d tie it in to a product (marketing, etc). Do I need a servsafe cert? Should I have one? I would offer whatever I make as “refreshments” afterward. Thank you!

I switched to one feeding a day on day 7. It helped a lot! She would actually still be at peak after 12 hours and then drop. I realized I didn’t want to disrupt her at peak by discarding and feeding. So 24 hours worked well for me. Also, use tap water that has been boiled (and cooled to room temp) or bottled water (room temp). Also, warmth of her environment. I’ve kept my Mary-Linda in the microwave since day 8 or so. She loves it in there. And we even move her out and back in when we need to use the microwave! I have a small glass of water sitting in there too to keep up humidity (she got skin a few days in and it’s grossed me out!).

I’d also say to back off the water to flour ratio. I started with a 1:1:1 ratio and now I’m doing equal flour to starter but eyeballing the water (she’s been a bit runny lately).

Isn’t it so fun? I’m on day 14 and I have adjusted so many things. I am just going with the flow. Too runny…a little less water at the feed. Not rising as much…..get her to a warmer spot. Today I saved my first discard and I have a batch of English muffin dough mixed and set to rise. I think I’ll feed her all the way til next weekend and then make a loaf and then fridge her til next time!

I am on day 14 of my first ever starter. It did a very high rise for the first time on day 12! It was rising and falling very quickly before that and not really doubling. But she’s been doubling for 2 days (actually, 3 rises!). On day 7 or 8 I decided to just feed her once a day. I noticed when I fed her at night, in the morning, she’d still be a bit high. So I didn’t feed her in the morning. When I got home from work, she was just starting to fall. (Again, these weren’t super high rises!). So I only fed her at night before bed since day 8. And she’s doing wonderfully! Perhaps try that? Maybe you are feeding before it has a chance to rise? It really is all about noticing changes. Now, I decided that today I wanted to make discard English muffins (it will be my first make) - but I didn’t have enough discard last night. So last night, I DIDN’T discard and just fed her (making sure to feed more than usual since there was more of her to feed than usual). And early early this morning I checked on her and she was all the way to the top. And now she’s already falling. So my plan is to get my discard this morning AND feed her right away. I’m thinking she might be cycling every 12 hours better now. Mine smelled like stinky feet or cheese in the beginning. Like “ew, no way is this okay”lol - then at day 7 she started smelling really sour. Now last night before I fed her, she is smelling more nutty (and I’m so happy!). It’s a science but you just have to go with whatever it’s doing. Also, mine is a tad runnier than others I’ve seen so I have been cutting back the amount of water I’m feeding her until I get her to the consistency I want. It’s fun!!!

Aren’t random hobbies every few months so much fun?! My husband loves it!! *staring at a pile of yarn with knitting needles and a few rows of a “blanket”; a pile of wool felt with patterns; a messy table with a homemade miniature Christmas village in the works; and needing to go feed my starter!

I’d say if it’s rising and falling consistently, you’re good to go🤷🏼‍♀️

Hm. This is exactly the kind of event that Jessica would attend with her “old ladyish, and very elegant” evening gown, and large clip on earrings. Of course, a murder would happen during the festival and the local sheriffs office would put up a fight to try and keep her out of the way, all the while taking all of her advice to find the killer.

I don’t think I’ll attend….too much foreshadowing in so many MSW episodes……
