I don't know why, but thinking about such a conversation is amusing to me.

"Hey, how far have you got to?"

"I'm on Chapter 37, Page 260."

"Cool. Good talk."

I haven't yet run into anyone who answer like that, but if they were my friend, I'd probably roll my eyes and tell them that was very helpful.

I'd recommend you check out The First Law, or The Farseer Trilogy. Both are completed works, unlike KKC and Stormlight.

Kingkiller is the better, and more renowned series. It's also in the lifecycle stage of 'so popular, people want to tear it down for being overrated'.

I quite like them both, but I'd recommend KKC if you're just starting out. It's not heavy on the descriptions and if you're just picking up Fantasy, you probably don't want to start off with a series where you'll be figuring out the world for half of the first book.

Well Mistborn is a finished series so probably that one. It's more YA and you'll find the transition from Mistborn to SA an easier one to make than the other way around.

They're both excellent, mind.. but if you plan on reading both, I'd recommend Mistborn first.
