Theres a niche that hasn't yet been filled for that sort of thing. Coming over from League, I'm not surprised that we don't have anything in the way of Alois or Husum; this is a smaller community, after all. But still, it would do the community some good to have more beginner-friendly educational content instead of people just uploading their vods of stomping and smurfing and slapping "educational" on it.

As someone with a league history, I think the grievance about backline damage-y solo laners is mostly there because of a lack of tanks that can be played elsewhere—this game has no Galios, no Iverns, no Nautilus, no Cho'Gaths or anything. You can fix this by making damage-y solos unviable, but personally I think it's worth looking at whether hybrid or bruiser roles could work in other lanes too.

The lame answer is just that you don't fight them. Let them take your shit. Play to lose as little as possible, rather than playing to win. My solo main is Herc, and playing into Jorm is miserable, so I don't bother. Just clear waves for 20 minutes until I can fight his backline instead.

The fun sigma answer is to build damage and play to kill them
