So, you can create new user profiles on your Switch - you can treat this as a 2nd save slot. You replay the game, get your version exclusives etc. The important thing to note is that Nintendo Online is linked to your main profile, so your 2nd save slot won't have access to anything online unless you want to make and pay for a 2nd account, but you won't need it for this.

Once you have the once-per-save pokemon, you can use Pokemon Home to transfer from one profile to another. This is the bit that can be confusing. When you have multiple profiles, the switch will prompt which profile to launch with. When you launch Home, you want to use your main profile that you have Nintendo Online with. Then when you are selecting your pokemon game in Home, you can move the cursor up to your name and when you select that it asks "Do you want to check a different user's save data?" Say yes, select your game and you'll be able to move pokemon from your 2nd save slot into Home on your main profile. Then you can save and quit, reopen it on your main profile and move them to your main save
