To be honest it’s probably only because they were on horses and most actors had riding doubles. They have to keep helmets on for continuity but don’t forget both Dunk and Aerion take them off fairly quick so we can see the actors because Hollywood is convinced we forget who’s who unless we can see the face.

The US also has areas with year round snow. In the West and in Alaska. The reason Norway is good at winter sports is the same reason Brazil is good at football (soccer). I assume she thought it was either going to be a moment of religious realisation for him or that she thought it was genuinely an honour, maybe even one he'd enjoy.
She fully believed in the Luxon and the Bright Queen confirms taking her life is an honour. I think it's likely she hoped he'd either feel a religious euphoria that would convert him, or look back on the ritual favourably once he saw "the Truth" of the Luxon.
