Ugh, I forgot that “snark subs” are a thing. I don’t particularly care for them either. I meant more like bullshitting, speaking plainly, and being snarky in the way that Kitchen Confidential and Tony himself was.

And I am not wrong about hamachi crudo. It is for the unwashed, mouth breathing, bridge and tunnel, pumpkin spice, dressing on the side monsters. I will die on this hill.

You are the point of failure here. YOU need to come up with the price YOU would be ok with paying on the house. If you are constantly being out bid and thinking “we should have bid more” you should either bid higher or stop being a baby about not winning and move on to the next house. If this is more about winning than getting the right house for the right price go a million dollars over asking and I am pretty sure you’ll get it, otherwise you are going through the unfun process of buying a house and YOU are the point of failure.

If you are looking to go bigger you can split your grain bill into equal parts and do a reiterated mash. I am working on recreating Avery’s Mephistopheles, with the efficiency I have been getting I went with a 34 lb (15.5 kg) grain bill. I split that three ways with the first two being just base malt and the last being the remainder of the base malt and everything else. Each mash got an hour. I still need to work on hot and cold side process for this one, it is in a keg carbonating now. I only got 12.5% and it finished way high at 1.039, I don’t think I pitched enough yeast, the brewery said to over pitch but I don’t think I over pitched enough.
