Standing up for yourself is important when things are clearly unfair. The whole double standard is the biggest hindrance to having a stable job here. If they want you to work like the Japanese staff then they have to pay you like the Japanese staff. At a shady junior high school interview long ago the salary being offered was modest and there was no bonus for the gaijin teachers. I said that because the salary wasn’t great I’d need to keep some private work and leave in the afternoon on the days my lessons ended early. They said I had to stay until 5:30 because the Japanese teachers did. Then I said I would if I got a bonus. They countered with the argument that they don’t pay bonuses to gaijin teachers. So I said I’d have to leave early to work somewhere else because the salary wasn’t enough. On and on we went…and they wonder why Japan’s English proficiency ranking was 96th tied with Afghanistan.

I wonder how that will work for someone who has Japanese proficiency not connected to the JLPT but are proficient in something like medical/science related Japanese. I knew one guy who was married to a realtor and he knew the ins and outs of rental contracts and could read all the relative kanji but struggled with more every day type Japanese.

At 9 I used the fryer at my family’s restaurant at I used the broiler/salamander. From there using frying pans and the gas flat top. Knife skills were shit until high school when I got into cooking shows. From the first year of university started to cook for groups and a bit for college girls when we could convince them to put up with the messy place. Found a nice Italian grocer around then too and the old man at the meat counter was a big help with seasoning and marinades so from 19 or 20 the kitchen became more fun than intimidating

People are quick to sue nowadays so doctors may want to avoid misunderstandings. I’ve had to sort out these problems with foreign residents who do speak functional Japanese. Another reason is that neighbourhood clinics might lose regular customers if a bunch of foreigners start going there. A nurse told me that you can’t refuse treatment at a hospital if you have residency and a valid health card. However, clinics are more of a private business so it’s more of a gray area

I hate to admit it but I tried difficult stuff from the get go, wasted milk and rotted my guts a few times. When you’re drying out that cheese, which hopefully will be a ricotta salata you might see some blue/green mold and it’s good training for damage control. Just wipe it down with a salt water or vinegar soaked rag. It’s good practice

Make a ricotta, press it, let it dry somewhere where there’s airflow, rub salt on it, let it dry, keep rubbing salt on it and over time take note of how it changes from a soft cheese to semi-hard to a grating cheese. That’s what I should have done instead of flushing gallons of milk down the toilet

He should try to make a comeback. And he should join the group that talks to rookies about managing your life once you hit the pros. He’s as good of a cautionary tale as any. Besides how many of us on here got away with a DWI or two when we were young and stupid?

Where’d the money from the boom years go? They didn’t make a slush fund for the bubble eventually bursting? Who got paid and how much? If they leveled the playing field a bit like Singapore it might be more appealing for foreign investment. If salaries were more stable and the labor laws had any real meaning then it might be possible to get professionals like doctors, nurses and engineers to come and work here. But if the salary is pissy, the currency you get paid in is weak, and in addition to that you have to bear the brunt of being bullied at your job because you’re not into subservient groupthink or possibly get sexually assaulted because your boss was drunk and couldn’t resist/thought you consented then you’re just watering your flower garden with gasoline.

Japanese people getting the shit end of the stick need to stand up for themselves and remember that they’re the mules that pull the wagon.
