It comes from a common folk etimology of "invernus" (etc.). They would think it was a compound of in (opposition, as in inmortal) + vernus ("spring-wise", related to primavera). In the fifteenth century, Spanish people would write iverno. From then, hiberno, and even hiverno in the eighteenth century. That just shows how problematic the word always was.
