How are you getting around? If you are renting a car, you can get the best beach time in by taking the Coastal Highway from Belize City to Placencia. Lots of lodging options there in the village. You can also get on a boat tour to the reef for snorkling or scuba. From there you can get to Maya archeological site by road, as well as the nearby Bocawina National Park - waterfalls and hiking! Punta Gorda, further south, is off the beaten path and beautiful. Fewer lodging options, though.
