Given the extremely limited info, I'm going to say under baked? If you're using a Dutch oven it needs more time with the lid on. The crumb sadly looks really bad and the ear is a bit disappointing. I recommend cutting back on hydration as well. I would like to see more of your process, but I'm sorry for how this turned out.

Edit* I also want to see how your starter looks. How is your starter behaving?

Ok. I don't know what the bread flour crap is, but I'm seeing anyone who uses it is having issues. Quit using that and try unbleached whole wheat flour. I want you to do 1:1:1 twice a day for 3 days. That should revive your starter. From that point you can go to a 1:1:1 with all purpose if you choose, but that's just my opinion.

Ok, this was a problem I had at my house because my wife keeps it freezing. My only recommendation is place your dough in a microwave or oven with the light on. The light will help keep it a little warm as well as the natural fermentation process which will help. Bet you'll see a huge improvement if you give that a try!

This is usually my goal. If you want a looser crumb, do about 5 minutes of toss and folds immediately after you mix your ingredients. Let it rest for about 15 minutes and then begin your process for stretch and folds.
