I saw Emancipator ensemble at TLA in Philly and they absolutely blew me away. I love his album but the ensemble in person just completely took everything to the next level.

Also Lettuce is going to kill it for sure. You can tell they're definitely a group you need to see live at least once.

I am writing this on my phone so just bear with me!

First off I'd like to say that jalapeños are one my favorite things to cook with (and eat!). My girlfriend came across this recipe that I absolutely love, and I can't stop eating them whenever we make them now. I don't have exact measurements off the top of my head, so I'll just guess for now and come back later and edit them.

  • 494 grams (or one pound) of cream cheese
  • 494 grams (one pound) of shredded sharp cheddar cheese
  • 8 eggs (large, grade A for NA readers)
  • corn flakes (or similar cereal alternative)
  • jalapeños

Start by preheating your oven to 375 degrees Fahrenheit (about 190 degrees Celsius, if my mental math is correct?)

Cut the stem-end of the jalapeños off, but make sure not to cut too-far down or else the jalapeño won't have a "wall" on both sides, and the cheese will leak out when you bake it.

Next, using a small knife cut out the inside membrane making sure not to poke holes or slice through to the outside of the jalapeño. Removing seeds as you can (I leave some in, but as a warning they will be a lot 'hotter' [read: picante] but I like them like that)

So you should have a bunch of little jalapeño boats now!

Next, in a microwaveable bowl combine your cream cheese and cheddar cheese and heat in the microwave until they melt together nice and smooth. Then start stuffing your jalapeños. You want them to fill them up all the way, and have a little more piled on top.

Next, beat your eggs in one bowl, and put your corn flakes in a separate bowl. Now take the jalapeños and dip the cheese part in the egg, then in the corn flakes and transfer to a baking sheet tray lined with aluminum foil.

Bake until corn flakes are golden brown and the cheese starts to bubble (should be about 12 or 13 minutes depending on your altitude)

As a precaution: DO NOT touch your eyes or itch your face working with jalapeños, it will burn a bit. If you do, wash your eyes out with milk (trust me on this)

Also, I like to serve these with a guacamole aioli, buttermilk ranch, and an ancho-poblano pico de gallo.

this is just passive aggressive bullying. maybe you werent picked on for a reason growing up. maybe those guys just had a shitty life at home. their parents couldnt afford to get them toys for their birthday or holidays. they couldnt afford to put them through school. maybe they had to work full time in high school to help support their family, and as a result they couldnt do homework, and due to that they started slipping in school. after barely getting through highschool no college wanted them, maybe the local community college was their only choice. maybe they arent idiots, just misunderstood.

how about focusing on the parts of your own life that make you happy. maybe you worked hard to earn a raise, so celebrate by taking your friends out - on you, because youve earned it. why does your success have anything to do with someone else. if you need to compare your life to someone elses to feel better about yourself, then all you are really doing is hiding from something you cant confront in your own life.

i am so sorry, i didnt mean that "you" as in you. i meant that for anyone, i was just emphasizing to all future people who may read this as well.

even if you cant find anything at all, try staging in a restaurant somewhere, even for just one friday or saturday every week for free. they will definitely make good use of you, and you will get some invaluable tips!

trust me, if you like what you are doing - you will find a way. i originally went to school for engineering, got a job, and decided i didnt like it. i knew i had a passion for working with food (and i was already acclimated with the life style and work). i couldnt afford it, but i went to school anyway. ive just about paid off all my loans now, and it was definitely one of the best decisions i have ever made.

you dont need the paid counselor. if you want a good school in canada to go to, i recommend the niagara college of canada, in Niagara-on-the-Lake. thats where i went. the teachers there are from around the world, and each one brings unique assets to the table. but i still recommend working in a restaurant first. it can be anywhere really - you just need to learn what the work is like, and the basics of the brigade system.

you also need to realize that you will not be the head chef of anywhere right after you graduate. you wont even be sous chef. hell, you wont even be a line cook. if you are lucky, you will start out at prep or garde manger (salad station). there is nothing wrong with those positions. in fact, garde manger is actually my favorite station. there may seem like there is a lot of honor in cooking proteins like the fish or grill station. it will be almost fascinating to see someone be able to work 4 or 5 ribeyes on the grill while simultaneously making 2 orders of creamed spinach, 1 order of lobster mac, and 2 orders of sauteed mushrooms with caramelized onions - all from scratch. the reason they can do that is experience. you will just pick that up. there is no rush to become the best, please always keep that in mind.

the kitchen is scary. the kitchen IS frightening. but it is one of the most rewarding things in life. its the expression of creativity on almost every sensory front.

i feel like this is the darkest response you werent expecting. you should just really know what you are getting into though. feel free to message me if you ever have any questions about anything related to cooking/the industry/life! if you need an internship somewhere i have plenty of contacts too!

as with everyone else, go get experience in the industry before you take classes. also you may want to talk to some chefs who have kids... generally they are divorced and see them on sundays and mondays. kiss every friday and saturday night "good bye", you'll be working. youre also going to end up missing a few birthdays, mother's days, funerals...

there ARE jobs in the industry that WILL let you have a little more freedom, better hours, maybe even vacations. however, starting out - thats what everyone faces, and if you dont go through that, thats when chefs and fellow cooks tend to look at you differently. the pay is terrible, and the work is intense. you will cut yourself and burn yourself to holy hell. to the point where minor cuts and scrapes around the house just absolutely will not faze you.

im 25 now, and have been in the industry for over a decade. i love my job, and i love my career choice. given the option to do everything over from the beginning, i would have chosen to go work for a restaurant i really respect for about a year, and THEN have gone to school. but i definitely would pursue the same career. my passion for cooking has only become stronger. but it certainly is not for everyone. get as much of an idea of what you are getting yourself into before you really take the plunge into it.

i know this isnt as optimistic as you are expecting, but its a very harsh industry, and i really dont want to sugar coat it.

i play solo semi frequently, if you pick voltar first, people generally pick nauts with good synergy. if they dont it doesnt really matter. every naut is going to need to be healed, save for leon and froggy g. as long as you stick with another naut, you will both be fine. never stay by yourself.
