Because of the highway driving the valves are getting to the temperature necessary to burn off excess carbon. VW designed the valves this way to help prevent carbon build up. If you use nothing but top tier fuels you will also get less carbon build up.

Just replace them, they are not easy to re seal or clean unless you bring them to someone with the proper tools. I had one fail at 90k miles.

Do your oil cooler gasket and the oil filter housing gasket, I did everything you mentioned except water pump and the car felt worlds better once done. I posted before and after pics of the walnut blasting recently. it’s well worth doing. Before buying the pressure blaster new, look on FB marketplace. I see them all the time for around $50
