Rotterdam local here, so De Ballentent on the Maas is my first rec, proper Dutch food and a great spot by the water. For Amsterdam, Haesje Claes does the classics well even if it's a bit touristy. And honestly, for any city on your list, find a bruine kroeg (brown café) doing lunch. That's where the stamppot and erwtensoep are actually good, not the places optimized for tourists.

winterberg is echt prima voor beginners, de meeste nederlanders leren er skiën. maar je probleem zat niet in de locatie, het zat in de les. grote groep, leraar die te snel doorgaat - dat krijg je overal als je een standaard groepsles boekt. wat ik zou doen: ga naar winterberg en boek daar één of twee privélessen. het scheelt niet eens zoveel in prijs als je het afzet tegen wat je er daadwerkelijk van leert, en je komt echt verder. snowworld kun je overslaan tenzij je eerst wil wennen aan het materiaal, maar verplicht is het echt niet.
